Polling rate 500hz or 1000hz is just overall preferences, such as a mousepad :) You should use what you feel is enjoyable in your hand, and that pad who has a nice surface for your mouse. Just get something that feels right!
And as i mentioned, PREFERENCES, same goes with sensitivity! Find a sensitivity that feels right, and then practice. All you gotta do is: Practice!
